Die Gruppe der Kohlenhydrate (= Saccharide) umfasst niedermolekulare sowie mittelmolekulare bis hochmolekulare, polymere Verbindungen. Kohlenhydrate werden deshalb unterteilt in Monosaccharide, Di-, Oligosaccharide und Polysaccharide (sowie Glycoside) (Einteilung s. Abb. 4.1).
