Perchlorate in der Nahrungskette: Herkunft, Umweltverhalten und Toxikologie

Hintergrund

Anlass dieses Reviews sind die im Laufe des Jahres 2013 veröffentlichten Perchloratfunde in Obst und Gemüse, die zu Spekulationen hinsichtlich der Quelle dieser Kontaminationen geführt haben. Landwirtschaftliche Düngung gerät häufig unter Verdacht, Verursacher solcher Lebensmittelkontaminationen zu sein. Die von der QS Fachgesellschaft Obst-Gemüse-Kartoffeln GmbH zusammengetragenen Daten wiesen auch Angaben zu Düngemitteln auf. Der vorliegende Beitrag fasst den derzeitigen Kenntnisstand zu Eintragspfaden in die Umwelt, Landwirtschaft und damit letztlich in die Nahrungskette des Menschen zusammen. Eingangs wird die Perchloratanalytik im Wandel der Zeit und die damit einhergehenden niedrigeren Nachweisgrenzen beleuchtet, um die im Folgenden diskutierten Kontaminationen besser beurteilen zu können. Lebensmittelbelastungen mit Perchlorat sind für den Verbraucher schwer einzuschätzen. Zum besseren Verständnis werden daher auch humantoxikologische Aspekte, die derzeit geltenden maximal tolerierbaren Aufnahmemengen und die Notwendigkeit, Perchloratgrenzwerte für Lebensmittel und Trinkwasser festzulegen, diskutiert.
