Summary
The essential oil of Egyptian garlic was obtained by steam distillation and the oil sample investigated by gas chromatography-flame ionisation detection (GC-FID), GC-mass spectrometry (MS) and GC-FTIR (Fourier transform infrared spectroscopy). As sulphur-containing main constituents (concentration higher than 1%) of this oil, diallyltrisulphide (29.7%), diallyltetrasulphide (4.4%), diallyldisulphide (3.2%), diallylsulphide (2.5%) and methylallyltrisulphide (2.1%) were identified.
