Spectroscopic study of the reaction of a natural arabinogalactan polysaccharide with 3-hydroxyflavones in aqueous solutions

The reaction of an arabinogalactan polysaccharide with 3-hydroxyflavones (3-hydroxyflavone, 5-methoxy3-hydroxyflavone, quercetin) in aqueous solutions was studied for the first time using spectral methods (IR, UV, heteronuclear NMR). It was found that the arabinogalactan in aqueous solution formed molecular complexes with the diketo-forms of the 3-hydroxyflavones and increased their solubility in water, thereby exhibiting hydrotropic properties relative to these compounds. It was shown that the 3-hydroxyflavone diketo-forms formed because water weakened the intramolecular H-bonds that stabilized their enol forms.
